Ingredients 食材
Serves 4 四人份
  • 4 boneless pork loin steaks, trimmed of any fat 4块去骨猪排(腰部) , 去肥肉
  • 2 tsp Chinese five-spice powder 2勺中式五香粉
  • sunflower oil 葵花籽油
  • 1 large red onion, cut into thin wedges through the root 红洋葱一只 , 切成楔形
  • 4 red apples, cored and cut into eighths 苹果四只 , 每只去核 , 切成八块
  • redcurrant jelly 红浆果果冻
  • red wine vinegar or cider vinegar 红酒醋或者苹果醋
  • 200 ml chicken stock 200毫升鸡汤

Method 做法
  1. Dust the pork steaks with the Chinese five-spice powder. Heat half the oil in a frying pan and fry the pork for about 3 mins on each side until browned and cooked through. Transfer to a plate.
猪肉抹上五香粉 。 煎锅里倒油 , 油温半热时放入猪排煎3分钟 , 两面呈棕色并熟透后出锅 。

  1. Add the remaining oil to the frying pan, reduce the heat slightly, then fry the onion wedges for 2 mins. Add the apples and cook, stirring occasionally, for another 3 mins.
  2. 再倒入一些油 , 用小火把切好的洋葱加热2分钟 , 然后加入苹果一起再烧3分钟 , 并保持搅拌 。

Add the redcurrant jelly to the pan, followed by the vinegar and then the stock. Bring to the boil and simmer rapidly, uncovered, for 8-10 mins until the sauce is slightly syrupy and the apples are tender. Gently reheat the pork in the sauce, turning to glaze each side.
  1. 在锅中放入红浆果果冻 , 并依次加醋和鸡汤 。 先转大火让汤汁烧开 , 再转小火炖 , 不加盖 , 8到10分钟 , 直到汤汁变得略微粘稠 , 苹果变得酥软 。 把猪排放入汤汁中 , 稍微再加热一会儿 , 等到猪排的每一面粘稠有光泽 , 即可食用 。
